The One With Ross and Monica's Cousin - S7-E19

Continuity mistake: When Monica comes into Phoebe's apartment for her Surprise Bridal Shower, the view of the hallway outside the apartment is a dead end on the right side (the left side cannot be seen), however, in S7:E12 (The One Where They're Up All Night), both when Phoebe is disposing of the fire alarm and when the fireman is at the door, it is clear that there is another apartment opposite hers, as well as a trash chute on the right side. The One Where They're Up All Night - S7-E12

Revealing mistake: When Chandler is getting a pan out to warm some milk, he successfully pulls the bottom pan out without too much disruption, however, the joke (and entire plot device - to wake Monica up) is to make as much noise as possible so Perry pulls out more pans on purpose and knocks them on the floor. This is quite clear - you can see him grasp the wok and pull it out onto the floor. (00:06:30)

The One With Rachel's Assistant - S7-E4

Continuity mistake: Ross has always said that Carol was his first (and only, until Julie) sexual partner, but in the episode where they tell each others secrets Chandler says Ross slept with the cleaner when they were at college. Some people say that Ross had kept it a secret, and that's why it had never come out before, but considering that he categorically states several times over series one and two how he'd only EVER been with Carol, getting quite upset at times, that explanation just doesn't ring true.

The One Where They're Up All Night - S7-E12

Plot hole: It is made clear through dialogue in the episode that Joey and Ross are stuck on the roof because Joey removed the bit of piping holding the door open. However, when Tag, Rachel and Phoebe get up to leave, Phoebe says "Shh, get me out of here" and there is a clear shot of the door standing wide open. Afterward, it is possible to see Tag reaching for the door handle to close it behind him. This is inconsistent with the idea that the door needs to be held open. (00:02:20)

The One Where Rosita Dies - S7-E13

Continuity mistake: When Chandler and Rachel figure out that the chairs were switched they both head over to Joey's apartment. When they enter the apartment, the new black chair can be seen with tags attached to the top and left side. When the scene cuts to Joey sitting down the tags are all missing from the chair. The One Where They All Turn Thirty - S7-E14

Plot hole: There's no way Phoebe has lived to 31 without knowing her birth date. She's had "real" jobs (like the massage parlor) and those require social security numbers and accurate birth dates. She didn't go to high school, but she mentions classmates, so she must have gone to elementary/middle school, and those required birth dates even in the '70s and '80s. She's also "lived in Prague," which she couldn't have visited without a passport - which requires a birth certificate.

Kathy: So, what did you do today?
Chandler: Well, I had an appointment to get my hair cut...
Kathy: Oh, it looks great!
Chandler: ...and then it got cancelled.

Trivia: Matthew Perry's wit is so legendary that the scriptwriters have often incorporated his gags into the show.

The One With The Jellyfish - S4-E1

Question: When Ross and Rachel are fighting, Chandler hides behind the door and bursts out saying, "I knew it!" When Rachel says, "It's not that common, it doesn't happen to every guy, and it is a big deal!" is this just a Chandler moment or is there another joke I have missed?

Answer: The statements that she's contradicting (that it is common, it happens to every guy, and it's not a big deal), are the things that a woman commonly says to a man who is suffering from erectile difficulty, typically to assuage his bruised ego. However, most men do not believe that these statements are true, as evidenced by Chandler's outburst. He's so caught up in the proof that women are lying about it that he gives himself away.
