Revealing mistake: In the first scene where we see Elizabeth talking to Jack on the deck of the ship, you can tell that Elizabeth is wearing a wig. When she turns to Jack, the wind blows her hair over the front of her shoulders, and you see her real (very short) hair on the back of head. When it cuts back to an over the shoulder shot of her, her wig is now covering her real hair. (01:37:30)

Trivia: The incredibly short shot of Tortuga when it is first shown (with the man being dunked and such) was actually filmed on the Pirates of the Caribbean ride in Disneyland. While the ride was shut down for remodeling, the crew actually went there and shot the scene with a mixture of live actors and existing animatronic props. If you look closely, many of the "actors" can be seen as fake. (01:04:50)

Answer: The jar was to put Davy Jones heart in. He can't touch dirt ever again since he failed to keep up his duties which means he wouldn't be able to get his heart back.

Chosen answer: Davy Jones cannot set foot on land for ten more years. The jar of dirt is to represent land. Jack carries it with him so that he always has land with him so Davy Jones won't be able to get near him, or so Jack is supposed to believe.
