Continuity mistake: At the start of the film, Shrek is painting his "Ogre Beware" sign, you will notice that quite a bit of the top left corner of the board is missing. When he hangs the board on the post it is the opposite corner that is gone. He did not paint on both sides. (00:02:35)
Continuity mistake: When Lord Farquaad announces Shrek as champion, there are flagposts surrounding them. In the close-up of Shrek and Donkey, these flagpoles have disappeared, as have the shields on the walls that the flagpoles stand on. (00:24:35)
Revealing mistake: When Shrek and Donkey are sitting by the fire and looking at the stars, when Donkey asks Shrek about "our swamp" and Shrek says "We?" When Shrek blinks, his right eyeball is slicing through his upper lid. (00:46:30)
Continuity mistake: When Shrek backs into the two barrels at the tournament, they both have taps on them. He then bashes one of these off with the beer mug. But when Donkey rolls the other barrel the tap has vanished on that one as well. (00:24:00)
Continuity mistake: In the scene where the mirror is brought in for Lord Farquaad, Gingerbread Man lies on a tray on the table. When the mirror is shown, and it cuts back to Lord Farquaad, the tray is moved to the other side of the table. (00:17:25)
Chosen answer: Who is "everyone"? The only person surprised he can talk is the one human who is processing the fairytale creatures for banishment, and this was used as a plot device to highlight a joke (between him flying and talking).

Fiona also says "it talks", after he "saves his ass."
To be fair, she was locked in a castle for the majority of her life, so she wouldn't know that donkeys would be able to talk.
And yet he wasn't the only one surprised by it; watch the scene again and Fiona was surprised, too.
