Question: During "I Need A Hero" when Puss begins fighting the guards a Spanish song briefly plays, what is the name of the song? I know I've heard it somewhere else before.

Answer: You're probably referring to "Livin' La Vida Loca", which was the first major hit single for Ricky Martin in 1998; in this film it's performed by Eddie Murphy and Antonio Banderas in character as Donkey and Puss In Boots, respectively.
I don't think the person who asked this question is referring to Living La Vida Loca. I think the song being referred to is the scene where the Fairy Godmother is singing I Need A Hero whilst Shrek, Donkey and Puss are breaking into the castle, and Puss stops on the way to fight the guards. After Puss gives his kitten eyes and says "En guard", he jumps up, taking his sword out to fight the guards, and heroic Spanish music briefly begins to play in the background. (Watch the video of this scene on YouTube https://youtu.be/WI0mSEzttx8 at the 3:55 mark for confirmation). I think it is that small piece of music that plays that is being referred to in the question, not Living La Vida Loca.
I think it's just an original part of the song to be honest, something Spanish added into it but originally composed for the song.

Question: Was the fairy godmother the one who cast the ogre spell on Fiona?
Answer: In the first movie Fiona says that it was a witch that cast the spell on her when she was a little girl.
That witch could have been the fairy godmother disguised as a witch.
Fairy godmother is a witch too.
Answer: Possibly. It's confirmed the fairy godmother locked her in that tower, and her son Prince Charming was supposed to go there and kiss her so she would not transform into an ogre anymore. However the curse worked in reverse and the fairy godmother told Fiona she was still cursed because she was still an ogre. But it is never stated she put the curse on her.
Answer: My theory is that the fairy godmother turned Fiona into an ogre for her son, Prince Charming, to marry her later on to become king. Harold was a frog when he fell in love with Lillian, so he asked the fairy godmother to turn him into a human. In return, the fairy godmother asked for Fiona to be locked up in a tower and await Prince Charming. It was a "favor for a favor" scenario. It is not sure who cast the spell on her, witch or fairy godmother, but the fairy godmother was the one to lock her away in a tower.
So, Fiona would've been born before Harold ever married Lillian?
No, it was an exchange "I give you access to the love of your life, you give me your firstborn daughter's hand in marriage to my son" kind of deal.

Question: What caused Fiona to turn back into a human?
Answer: It wasn't a side effect of the "Happily Ever After" potion, it was the main purpose of it. The potion turned the drinker of the potion and his or her true love into a more beautiful form. However, in order for them to stay in that form, they must kiss before midnight. Since Shrek and Fiona waited till after midnight, they reverted back. Donkey also reverts back. There was a script idea to show Dragon also change, but it was scrapped. However, we only see Dragon after the potion wore off, so she too would be in her normal form, since they didn't kiss before midnight.
Answer: Yes. Since the Happily Ever After Potion causes Shrek to become a handsome man and, according to the instructions, causes the persons one true love to also change into a different form, after Shrek became human, Fiona turned back into a human.
Answer: That was an unintended side effect of the "Happily Ever After" potion that caused Shrek to turn human and Donkey to turn into a white stallion; the reason it caused Fiona to revert to her human form is never really explained within the film.

Question: How long did it take for Shrek, Fiona, and Donkey to get to the kingdom of Far Far Away?
Answer: Roughly 2000 "are we there yet?" questions away. Which to Fiona and Shrek must have felt like 10,000 years. But seriously, they come across signs for "away" and "far away" adding up to 900 miles distance, so I'd say "far far away" is about 3000 miles from the swamp. By carriage that's about 21 days if they keep going day and night and at the same, slow pace (6 miles per hour?) they were going.
The curious thing though is where they would get food while traveling to far far away.
The 21 days I said for calculation purposes, obviously they had stops to eat and drink (pee).
