Question: This question applies to all Mario Kart games except Mario Kart 8 and leaving out that they're part of the Mario universe. What is the purpose of collecting gold coins? They can't be used to buy anything and even if a player doesn't have any and falls into a pit, Lakitu will still help the player out.

I used to own this game on the SNES. (till my physical games were all stolen)
Let's go back in time a bit, to 1994. There I was, just little ol me at 4 years old. And what do I get for Christmas? (or maybe it was my birthday I can't remember for sure)... my very own brand new SNES, complete with my first ever video game, Super Mario World. That was the real start of my gaming journey right there and lead to the man I am today.
But that wasn't my only game, of course. I had several on the SNES... including Super Mario Kart! Which was my very first racing game.
I have a very very heavy nostalgic bias for this game as well as Mario Kart 64 later on. For me, it's very hard for me to decide some times if I like Super or 64 better for Mario Kart. So I usually say I love them both equally.
This was my start in racing games, and my love of kart racers. And perhaps because I grew up with Mario Kart, Mario Kart 64, and later Mario Kart Super Circuit on the GBA... I don't like modern Mario Kart games, really at all. In my opinion, the last good Mario Kart game was Double Dash, and it all went down hill after that. Super, 64, and Advanced are all Great! with Double Dash being good. I can't speak to the DS Mario Kart game as I never played it and never owned a DS. But most of the others I have played at one point or another and they all have the same issues, but getting worse. With Mario Kart Wii being the true down fall of the series. Possibly the worst one in my book but I have equal distain for Mario Kart 8 as well. Being nothing but over powered item fests and luck. Or just hang back and get a good item to spam on the last lap and lazy your way to victory. There is no skill involved with Modern Mario kart. I can't stand what the franchise has turned in to. The latest one, Mario Kart World, seems to be even more of the same but making it worse with that ridiculous amount of racers in a single race now. And the open world gimmick is stupid. Mario Kart World sacrificed quality for open world and bland levels with interconnectivity.
Anyways, back on subject. Super Mario Kart is kart racing at it's purist and most skill based. With Mario Kart 64 building upon it and adding while also having a couple of draw backs but still equal.
I love Super Mario Kart, and I have mastered the game, full gold on all, even mirror mode. Did the same with Mario Kart 64 as well.
For me, Mario Kart doesn't get better than those first two games.
Super Circuit could have been an improvement over Super, as it's got all of Super in it but adds a full new game as well. However it's held back by the limitations of the GBA hardware and that small screen.
So for me... the top games in the series are
1. Super Mario Kart
2. Mario Kart 64
3. Mario Kart Super Circuit
4 Mario Kart Double Dash.
the games after that are, in my opinion, trash. Item fests, luck based, no skill "family fun" games that are just communism in racing form.
Mistake Status: Not sure what I could do for Super Mario Kart but might do some research into glitches or something later on.
Answer: Across all games, collecting at least 10 coins gives a slight speed boost. In some games, collecting coins unlocks things.
