When The Terminator's stolen police car is shown up close in the parking structure, the motto on the left side of it reads "to care and to protect." After the car crashes, you can see the motto on the left side again, but this time it reads "Dedicated to serve."
When the Terminator says "I'll be back" he walks out of the police station. The cop inside the building looks out the window, looks very surprised, and you can see the headlights from the car shining on the cop's face. But when we see the car just before it comes crashing through the building the headlights aren't on. In the next shot of the cop the headlights are still shining on him.
At the start of the film when we first see Reese arriving, the drunk homeless guy is holding a bottle in his left hand, then the camera continuously switches between Reese's arrival and the old guy, in these shots, the bottle keeps changing hands from left to right, then back to left.
In the scene where Sarah Connor shoots Dyson in his house, it pans back and forth from him to her. In each shot of Dyson in his living room, the magazines on the coffee table are scattered, then stacked, then scattered again. Also, if you look at the blood on his shoulder, it is very heavy in one shot and very scarce in the next.
Towards the end of the film, when the T-1000 controlled police helicopter bears down on the SWAT truck, Sarah tries to gun it down and the T-1000 returns fire. Look carefully at the shots of the back of the SWAT truck, and notice that the bullet marks made by the T-1000 on the closed door keep changing between shots.
When the T-800 arrives between the tractor-trailers, you can see a bumper sticker (i.e. "Vehicle makes wide turns") on the back of the trailer when the sparking begins. When Arnie arrives in the bubble it "melts" out the back corner of the trailer, and the sticker is no longer there.
In the scene where John & Catherine are in the hangar at the runway, the Cessna's tail number is N3035C. When the plane is shown in the air, the number is N3973F. When they land, the tail number has changed back to N3035C.
During the shooting scene at the cemetery, note one of the stones (rectangular from the left) behind T-101 when he comes out carrying a coffin. You can see it has 5 holes - 3 left, 2 upper right side. However, a few seconds later, it has 6 holes, but their position has completely changed, 3 upper side, 3 right side.
In a scene where John talks to Catherine while sitting at the table in a moving RV, watch the explosives he is working on. Position of the charges changes with every shot at Catherine. At one point they completely disappear from the table leaving only the Glock 18 handgun, and just a second later the table shown full of explosives again.
