Continuity: Right after the monkey knocks Jack's hat off, there is a shot of the monkey on the rigging. The moonlight is shining on him, but he looks completely normal. Shouldn't he be cursed? It's not dawn, the next shot is a time lapse, as evidenced by the fact that the Pearl had moved far enough away from Jack's hat that the other ship didn't see it.
Continuity: In Tia Dalma's shack, when Tia Dalma approaches Will saying he has a touch of destiny about him and that he wants to know her, Will was standing in the door and took a few steps forwards, his back to the door. But when Jack runs to separate them, if you look through the gap between Tia Dalma and Will, they are now standing sideways to the door.
Continuity: When trying to flee, Norrington falls and drops his sword and the chest. As he crawls in the first shot, note the sword's hand guard and hilt. In the next shot the hand guard and hilt actually differ, though the handle itself is similar to the previous shot. (This has nothing to do with camera angle.)
Continuity: At the end of the film in Tia Dalma's hut, when Tia is handing out drinks, just before Gibbs gives his two cents about Jack, there is a wide shot of the whole group and Gibbs can be seen pushing away from the doorframe and standing up. The camera cuts to a closer shot of Gibbs, and he pushes away from the doorframe a second time.
Continuity: In the scene where the two sailors have found Jack's hat in the water, they try it on in turn. When the second man tried it on, the hat changes position between shots, with no time for him to move it. In one shot, one of the corners is facing front, in the next shot a flat side is facing the front.
Continuity: In the scene when Will is talking to Cutler Beckett, there is a clock behind them that is being hauled up at a very slow pace. But when the shot switches and there's a close-up on Will, the clock has disappeared. Despite the angle change, we should still be able to see the clock. There hasn't been enough time for it to have moved out of shot.
Continuity: After Jack explains the legend of Davy Jones to Elizabeth, and they have found their heading, Elizabeth's braid is going down her back. When Jack points Elizabeth toward the ship her braid is now on her right shoulder. She doesn't move her head and there is not enough time for her to move it herself.
Continuity: Aboard the Flying Dutchman, when Will sneaks in to steal the key, as the shot draws closer to Jones the quills are shown on the organ keys - with one leaning over the keys. In the next shot, as Will reaches sleeping Jones, both quills are leaning away from the keys, and an extra quill stick (feather free) suddenly appears.
