Were all of the cars in Egypt yellow and the same model or did they sneak back to retrieve that one taking it to an all night Egyptian body and fender shop before setting off to rescue Evie? Imhotep needs his physical organs that are contained within the Canopic jars the Americans have. This means Imhotep must have existed in the Old Kingdom, as the ancient Egyptians eventually discovered a method of preserving the organs within the body of the deceased. This led to Canopic jars becoming purely symbolic, sometime near the birth of the New Kingdom. See more...

Continuity: When Rick finds Beni in the office, after Beni says "I am immune", Rick slams him into a pile of boxes, sending stuff flying. Nothing is visible behind Beni's head, just a sheet of paper at neck level. Then after Rick says "immune from what?" we cut to a different angle - boxes are now piled much higher behind Beni, and there's a bit of paper resting on his hat.
