Continuity: At the edge of the cliff, in the first overhead shot, when the four men lift the coffin its "head" side is nearest the water. However, in the next shot the "foot" side is nearest, before they throw it in the water.

Trivia
The rings worn by Jack Sparrow are not mere props, but rings that Johnny Depp actually owns. After completing the first film and learning of the second and third installments, Depp actually bought several rings specifically for the Pirates films. Another one of the rings he wears is actually a replica of an antique ring he owns. See more...
Pirates of the Caribbean: Dead Man's Chest (2006) - 130 mistakes
These mistakes are currently being ordered by time. Entries without times will appear at the end.
Directed by Gore Verbinski, starring Bill Nighy, Johnny Depp, Keira Knightley, Orlando Bloom (add more)
Continuity: When Jack shoots a hole in the casket killing the bird, the amount of feathers on the casket differ between the shots.
Continuity: At the beginning of the film, right after Jack hands Gibbs the dead man's leg, Mr. Cotton throws Jack's coat about his shoulders, over his hair and bandanna, but when Jack turns around, in the next shot, his hair and bandanna are on the outside of the coat. No one touched them, and Jack seems oblivious to his various accoutrements, so he wouldn't have done this either.
Continuity: In the scene where Will visits Elizabeth in jail, she is rubbing his chin in most of the shots but in one shot her hand is suddenly down and then it goes back up again in the next shot.
Continuity: When Governor Swann and Will go to see Elizabeth where she is imprisoned, Will and Elizabeth hold hands through the square bars of the cell. Their hands are actually in different openings depending on the shot.
Continuity: When Beckett says, "A marriage interrupted," he writes "Lord" as he signs the Letter of Marque, but when he places his seal, his handwriting differs.
Continuity: When the cannibal walks across the bridge and sees some prisoners fall to their death and the others escaping, there is a long stick, which has a black design on it, threaded through his lip. When he arrives back at Jack's roasting, the stick's design is very different.
Deliberate "mistake": After Jack is hung up over the kindling, to be "roasted and eaten", a cannibal carries a torch across the bridge and shouts. In the cannibal's close-up, the painted black/white sticks pierce his left ear, whereas in the previous and following shots the sticks actually pierce his right ear. The close-up is a flipped shot for continuity of face position.
Continuity: When Will, Gibbs and the rest are in the ball cage and escaping the cannibals, they roll down a hill and hit a tree, which they then roll up. This would be impossible unless the weight is evenly balanced throughout the ball completely.
Continuity: When Jack, who is tied up, skewers the coconut in the wide shot the coconut is vertical. However, in the close-up of the coconut, before he spins around, the coconut is horizontal.
Continuity: After the cage of bones falls into the water, Cotton reaches up out of the water to open the broken cage, but in the next shot he is still under the water, behind Marty.
Continuity: When the cannibal women throw fruit at Jack, the large papaya hits the pole's point and the end of the fruit actually smashes. However, in the next shot it slides across the pole with a perfect circular hole.
Continuity: When the cannibal women throw fruit at Jack, the first fruit skewered is the papaya, which ends up near Jack's face, in the close-up. After Jack vaults to the other cliff-top, when the papaya slides towards his face, the fruit is completely different, and the position of its hole differs. Additionally, the watermelon also differs (note stripes) between shots, as do other skewered fruit.
Deliberate "mistake": When Shishka-Jack falls, the rope is tied round his left ankle. When the pole gets stuck, in the second close-up of Jack spinning free the rope is actually tied round his right ankle (his spinning loose of the rope is also the opposite way).
Continuity: In Tia Dalma's shack, when Tia Dalma approaches Will saying he has a touch of destiny about him and that he wants to know her, Will was standing in the door and took a few steps forwards, his back to the door. But when Jack runs to separate them, if you look through the gap between Tia Dalma and Will, they are now standing sideways to the door.
Continuity: Whilst Elizabeth puppeteers her wedding dress, in the close-up Captain Bellamy stands up and says, "Over there," as he points with his left arm extended. However, in the next overhead shot, it is his right arm that is extended as he points.
Continuity: When Gibbs interviews potential crewmen in the Tortuga bar, things on the table change position between shots, and the height of the three candles differ as well.
Continuity: On the Dutchman, when Jones holds out the whip, for Bill Turner to use on Will, the whip's direction flips between shots, it faces the opposite way when Bill grabs it.
Continuity: When Jack and Gibbs walk on the dock towards the Pearl, they pass a couple kissing, as Elizabeth calls out to Jack. In the following shot, that couple is much farther (about 10 ft) up the dock, away from the Pearl - note the other ship's exterior, behind them.
Continuity: When Cutler Beckett plays with Norrington's sword, as he begins to speak with Governor Swann, the step ladder is seen to Beckett's right - note its shadow on the wall map. The ladder changes position twice in the following shots.
