Continuity: In the brig aboard the Pearl, Jack sees Gibbs' flask in the pooled water around him. He reaches for it, holds it upside down to his mouth to drink from. There are two successive shots of him holding it to his mouth and then moving it away. The left sleeve leaning on his knee and the position of the long striped cloth that he wears around his waist differs in both shots. Also, the item on the floor to his left is in a different position in both shots.

Please note: The sliding down the rope scene is perfectly possible - the link between Johnny Depp's handcuffs is long enough that he can fold it in half and sling the loop over the rope. Also Will's father - yes, he was still alive, stuck under the sea for 10 years attached to a cannon (or crushed to pieces - they comment on "the crushing black depths"). Not a mistake though. Most importantly, JACK ISN'T CURSED FOR THE WHOLE FILM. He's only cursed when he takes a medallion out of the chest right at the end.
Continuity: When Mr Gibbs shouts what sounds like, "Do it you gobs, or it's you we'll load into the cannons!" while the Region 2 DVD subtitles read "Do it you gobs!" which matches his mouth movements, the Region 1 subtitles say "do it you dogs..." yet his lips clearly form a B not a G. A bizarre difference between versions.
Continuity: Anamaria has her hands on Jack's shoulders in the front shot, just as she said, "The Black Pearl is yours," and then she removes her hands. In the next successive side shot, her hands are still on Jack's shoulders, she then removes them again as she smiles at him. Jack's left sleeve is different in both shots.
Continuity: As the soldiers are firing at Jack after his escape, he runs across the footbridge. In the far wide shot, he crosses the center of the bridge and passes the man with the sack on his back. In the next close-up shot, Jack is just getting to the center of the bridge and starts to pass the man with the sack on his back.
Revealing: In the wide shot of the Black Pearl chasing the Interceptor, because of its sailing speed the flag at the stern of Interceptor is upright and blowing hard into the wind. Aboard the Pearl, when Barbossa looks straight ahead at the 'speeding' Interceptor, the flag is down and not blowing at all.
Continuity: In the scene where Jack and Will commandeer the HMS Dauntless, the HMS Interceptor sails out with all her square sails completely square on (i.e perpendicular to the ships direction of travel) with the wind behind her. We then see the Dauntless sailing out of control in the other direction with her sails in the same position, the winds have switched 180 degrees.
Continuity: When Elizabeth faints and is falling into the water after Norrington's proposal, there's a shot of her from on the rock. You can see her hat and scarf falling right after. But when the shot moves to Jack and the two guards on the ship, Elizabeth is falling and there is nothing above her - where are the hat and the scarf? There is plenty of time to see the hat and scarf fall too, if they were actually included in the shot, but they simply weren't.
Continuity: When Jack and Will are under the bridge, and Jack says, "We're going to commandeer that ship. Nautical term," his right cheek is clean. When he turns to ask Will "One question about your business..." there is a broad black smudge running from his right cheek to the right side of his nose. As he turns around after Will's answer and says, "No worries..." his right cheek is again clean, without ever having touched his face.
Continuity: Will comes into the blacksmith shop, comments about Mr. Brown and then approaches the anvil. In this shot the wood post on his right has a hammer and knotted rope hanging together on the same side. However, later when Jack sprays the soot at Will the same wood post is seen on Will's left and the rope hangs on another side of the post, not together with the hammer. That rope changes shape and position in other shots in between too.
Continuity: When Elizabeth joins Barbossa for dinner there are candelabras on the table behind Elizabeth and Barbossa and many loose candles all around. The candle heights vary in many shots. One example: when Barbossa says, "All the scattered pieces of the Aztec gold," the candles on the candelabra behind Elizabeth are much shorter than in the shot right after when Elizabeth asks, "And the blood to be repaid?" where they're much taller.
